Description: This course will provide the skills and knowledge required to complete a professional evaluation of wine. It explores Australian wine styles, wine production, the role of a Sommelier, as well as food and wine matching.
  • Discuss Australian wine styles
  • Discuss basic wine production
  • Implement appropriate tasting conditions
  • Identify key styles and grape varieties using sensory valuation techniques
  • Identify basic wine faults
  • Communicate basic information about wine styles
  • Food and wine matching
  • Discuss the role of sommelier, wine list compilation and wine service.
Duration: 21 hours - 1 evening per week for 7 weeks

Hospitality (Wine/Sommelier electives)

Course Number: 18113
Qualification: Certificate III
Description: The Certificate III in Hospitality (SIT30707) - Sommelier elective is for those who want to work in the hospitality industry at the operative team leader level as a sommelier. This specialist course for budding sommeliers starts in February and students attend for one day per week for 18 weeks (6 months) Students are expected to be working in Hospitality to complete the course within 6 months.

The program teaches you a variety of skills. Participants must have access to an appropriate workplace or simulated workplace environment during the course.

The units in this course include:

  • wine evaluation (standard and advanced),
  • provide specialist advice on wine
  • wine service
  • conduct a product tasting,
  • Specialist Australian wine knowledge
  • Food and Wine matching

On successful completion students can enrol directly into the WSET Award Level 3 - Advanced Certificate in Wines and Spirits.
Duration: 7 hours per week for 6 months (Monday)
