The current “tick-grid” tasting paper will be replaced by a written tasting note on two wines. Students who are enrolled for an exam after 31 July 2010 will be required to complete a written tasting note on two wines. The tasting paper will now last for 30 minutes.
There will still be four short written questions, but each of these will now count for 24 marks rather than the current 25 marks, and there will be one four-mark question covering social, health safety and legal issues.

The Sydney Wine Academy is actively involved with research projects. The latest project involves assisting researchers from the Centre for Forensic Science based at the University of Technology, Sydney in their analysis of various trace metals in wine to enable provenance testing.
Similar studies have examined and classified wines from New Zealand, Canada, South Africa and the UK. It is anticipated that the developed method will permit the classification of samples into the various wine regions of Australia and also enable the discrimination of local and international wines from a provenance testing perspective.
Along with the Australian Wine Research Institute (AWRI) the Academy will collect samples of wine to be analysed by the researchers.
